This classic preparation showcases the natural sweetness of yellow croaker, a prized fish in Chinese cuisine. The quick steaming method locks in moisture and creates that signature tender, flaky texture.

Ingredients

yellow croaker 1 whole fish, about 400-500g, cleaned and scaled
fresh ginger 15g, thinly sliced
scallions 20g, cut into diagonal pieces
light soy sauce 2 tablespoons
Shaoxing wine 1 tablespoon
sesame oil 1 teaspoon
salt 1/2 teaspoon
vegetable oil 2 tablespoons

Prepare the fish

Rinse the cleaned fish under cold running water. Pat completely dry with paper towels. Make 2-3 shallow diagonal cuts on each side of the fish, cutting just through the flesh to help flavors penetrate.

Season and marinate

Rub the fish inside and out with salt and Shaoxing wine. Let it rest for 15-20 minutes at room temperature. This allows the fish to absorb the flavors and removes any lingering fishy odor.

Arrange for steaming

Place half the ginger slices and scallions on a heatproof plate or steaming dish. Lay the fish on top, then scatter remaining ginger and scallions over the fish. Drizzle soy sauce and sesame oil evenly over the surface.

Steam until tender

Bring water in a wok or steamer to a vigorous boil. Carefully place the dish in the steamer, cover, and steam over high heat for exactly 7 minutes. Remove from heat and let sit covered for 2 minutes—this residual heat finishes cooking the thickest part of the fish.

Finish and serve

Heat vegetable oil in a small pan until smoking. Carefully remove the steamed fish from the platter. Pour the hot oil directly over the fish to create a fragrant sizzle. Serve immediately with the accumulated juices.
