Stewed Chicken Essence

Ingredients

Fresh fat hen (slaughtered, plucked, entrails removed, head and feet cut off) 1 (about 1500 g)
Goji berries (wrapped in white gauze) 100 g
Ginger 20 g
MSG (monosodium glutamate) 0.5 g
White pepper powder 1 g
Salt 2 g

Instructions

1

Simmering

The hen is slaughtered, plucked, entrails removed, washed, with the head and feet cut off. Place it in a pot with clear water over high heat and bring to a boil. Skim off the foam, add the ginger and the goji berries (wrapped in white gauze), then move the pot to a smoldering stove and simmer on very low heat for 4 hours (3 hours for a young chicken).

2

Preparing the chicken

Remove the chicken from the pot. Pull the meat apart with chopsticks, discard the back bone, pick out the ginger, and remove the goji berries. The dish is then ready.

3

Serving

To serve, place the chicken essence and shredded chicken in a bowl, add MSG, salt, and white pepper, and optionally add some fresh tender greens before eating.
