Stir-Fried Beef with Green Peppers in Black Bean Sauce

Stir-Fried Beef with Green Peppers in Black Bean Sauce

Ingredients

Beef hind leg meat (sliced and coated with cornstarch) 300 g
Green peppers (washed, sliced, salted, and blanched) 250 g
Fermented black beans (rinsed with warm water and minced) 250 g
Egg 1
Soy sauce 3 tsp
Salt 3 tsp
Sugar 1 tsp
MSG 1 tsp
Sesame oil 1 tsp
Baking soda 1 tsp
Ground white pepper 1 tsp
Cornstarch 0.5 tbsp
Broth 0.5 tbsp
Chopped scallions 3 tsp
Shredded ginger 3 tsp
Minced garlic 3 tsp
Peanut oil (about 0.5 tbsp actually used) 500 g

Instructions

Step 1

Slice the beef, coat it with cornstarch, then add the baking soda, soy sauce, egg, and 0.5 tbsp of peanut oil; mix everything until well combined.

Wash the green peppers and slice them. Salt them briefly, blanch in hot water, then drain off all the moisture.

Rinse the fermented black beans with warm water, then mince them finely.

Heat the peanut oil in a wok to about 30% hot, then bring it up to about 60% hot. Add the green peppers, flash-fry briefly, remove them, and drain off the oil.

Leave a thin layer of oil in the wok and stir-fry the chopped scallions, shredded ginger, and minced garlic until fragrant. Add the beef and green peppers and stir-fry, then add the soy sauce, ground white pepper, MSG, sugar, broth, and minced fermented black bean mixture. Thicken with cornstarch, stir to combine, drizzle with sesame oil, and serve.
