Instructions
Marinating and Preparing Sauce
Cut the beef into thin slices against the grain. Add baking soda, fine salt, dark soy sauce, cornstarch, and 0.5 tbsp peanut oil; mix well and let marinate briefly. In a bowl, combine fine salt, MSG, ground white pepper, dark soy sauce, and cornstarch to make the seasoning sauce.
Blanching and Velveting
Blanch the bamboo shoot slices and drain well. Heat 1.5 tbsp peanut oil in a wok to about 50% hot, then add the beef and bamboo shoot slices to velvet briefly; remove and drain.
Stir-Frying and Plating
Leave a little oil in the wok, add garlic, ginger, and scallion to release their aroma, then add the beef and bamboo shoot slices. Splash in a little cooking wine, pour in the prepared seasoning sauce, toss quickly until evenly coated, and serve immediately.
