Story

Bitter melon, or bitter gourd, is cherished for its distinct flavor and health benefits. Pairing it with tofu and egg creates a satisfying, protein-rich meal that is simple yet delicious.

Ingredients

Bitter melon 1 medium
Firm tofu 200g block
Eggs 2 large
Salt to taste
Cooking oil 2 tbsp

Prep the Ingredients

Cut the tofu into bite-sized cubes. Slice the bitter melon lengthwise, scoop out the white pith and seeds, then cut it into thin slices. Crack the eggs into a bowl and beat until well combined.

Season and Sear the Tofu

Lightly salt the tofu cubes. Heat a splash of oil in a pan over low heat. Add the tofu and fry gently until the sides are firm and slightly golden.

Coat and Finish Frying

Brush a thin layer of the beaten egg over the surface of the tofu cubes. Flip the pieces to cook both sides until the egg is set and the tofu turns golden brown with crispy edges. Remove from the pan and set aside.

Stir-Fry and Serve

In the same pan, add a little more oil if needed and stir-fry the bitter melon slices until they are tender but still crisp. Return the cooked tofu to the pan, toss everything together to heat through, and adjust seasoning before serving.
