Ingredients

Celery ribs 2 stalks
Dried tofu (bean curd) 100g
Lean pork 150g
Hot green pepper (or bell pepper) 1
Scallion 1 stalk
Cooking oil 2 tbsp
Soy sauce 1 tbsp
Salt to taste

Prep the vegetables and meat

Wash the celery and cut it into bite-sized segments. Slice the dried tofu into thin small pieces. Cut the lean pork into thin slices. Slice the green pepper into strips and chop the scallion into pieces.

Stir-fry the pork

Heat a wok or frying pan over medium-high heat with a tablespoon of oil. Add the pork slices and stir-fry until they change color and are mostly cooked through. Remove the pork from the pan and set aside.

Combine and cook

Add the remaining oil to the pan. Toss in the scallions and peppers for a few seconds, then add the celery and tofu. Stir-fry for a couple of minutes until the celery is tender-crisp. Return the pork to the pan, season with soy sauce and salt, and mix everything well. Serve hot.
