Prep the vegetables
Wash the celery stalks thoroughly and cut them into roughly 4cm diamond-shaped pieces. Peel the carrot and slice it into similar diamond shapes. Having all pieces similar in size ensures even cooking.
Toast the cashews
Heat 2 tablespoons of oil in a wok or large skillet over medium heat. Add the raw cashews and stir continuously until they turn a light golden brown, about 3-4 minutes. Watch carefully to avoid burning. Remove and set aside.
Stir-fry the vegetables
Add the remaining oil to the wok. Toss in the minced garlic and stir briefly until fragrant, about 30 seconds. Add the carrot first since it takes longer to cook, stir-fry for 1 minute, then add the celery. Cook for another 2-3 minutes, keeping the vegetables crisp-tender.
Combine and season
Return the toasted cashews to the wok. Season with salt and a tiny pinch of sugar if desired. Toss everything together for about 30 seconds until well combined. Serve immediately while hot.
