This recipe transforms simple ingredients into something special. The key is toasting the almonds until they're golden and fragrant—they add wonderful texture and nuttiness to the crisp celery and sweet corn.

Ingredients

celery stalks 2, sliced on the diagonal
sliced almonds 1/4 cup
corn kernels 1/2 cup (fresh or canned)
vegetable oil 2 tablespoons
salt to taste

Toast the almonds

Heat a dry pan over medium-low heat. Add the sliced almonds and toast, stirring constantly, until they turn golden and release a fragrant nut aroma. Watch carefully—they can go from golden to burnt quickly. Remove to a plate and set aside.

Sauté the celery

Add the vegetable oil to a wok or large skillet over medium-high heat. Once shimmering, add the sliced celery and stir-fry for 1-2 minutes until it starts to soften but still retains some crunch.

Add the corn

Toss in the corn kernels and continue stir-frying for another 2 minutes. The corn will add sweetness and color to the dish. Season with salt to taste.

Combine and serve

Add the toasted almonds back to the pan and give everything a quick toss to combine. Transfer to a serving dish and sprinkle a few extra almonds on top for garnish if desired. Serve immediately while hot.
