Stir-Fried Chicken Dices (Plain Style)

Ingredients

chicken breast (pounded with the back of a knife and chopped into fava bean-sized cubes) 250 g
egg (use the white for coating) 1
green pepper (cut into fava bean-sized cubes) 50 g
vegetable oil (for deep-frying and stir-frying) to taste
cornstarch (for coating) to taste
wet starch (for thickening) to taste
fine salt to taste
Shaoxing wine (for marinating) to taste
MSG to taste
chicken broth (for thickening) to taste

Prepare the Ingredients

Pound the chicken with the back of a knife and chop it into fava bean-sized cubes. Place it in a bowl, add an appropriate amount of Shaoxing wine, MSG, fine salt, egg white, and cornstarch, mix well to coat, and set aside. Cut the green pepper into fava bean-sized cubes.

Slip-Fry the Chicken Cubes

Heat oil in a wok to about 150–180°C (medium heat). Add the chicken cubes and stir to separate. When the chicken turns white, remove and drain the oil. Set aside.

Combine and Thicken

Add oil to the wok. When hot, add the green peppers and briefly stir-fry. Add the chicken cubes, then add an appropriate amount of fine salt, MSG, and chicken broth. Thicken with wet starch, stir-fry a few times, and serve.
