Chinese sausage (lap cheong) has a distinctive sweet-savory taste that pairs beautifully with the fresh crunch of green bell peppers.

Ingredients

Chinese sausage (lap cheong) 3 links (about 150g)
Green bell peppers 2 medium
Fresh ginger 1 small knob, thinly sliced
Cooking oil 2 tablespoons
Water 2-3 tablespoons
Salt 1/4 teaspoon
Chicken powder (optional) a pinch

Prep the ingredients

Cut the Chinese sausage into thin diagonal slices, about 1/4 inch thick. Slice the green bell peppers into strips or chunks. Peel and thinly slice the ginger.

Start the stir-fry

Heat oil in a wok or large skillet over medium-high heat. Add the sliced sausage and ginger together. Stir-fry for about 1 minute until the sausage starts to release its oils and the ginger becomes fragrant.

Add peppers and finish cooking

Add the green pepper pieces to the wok. Continue stir-frying for another minute. Pour in the water (this helps create steam and finishes cooking the peppers), then season with salt and a small pinch of chicken powder if using. Toss everything together and cook until the peppers are tender-crisp, about 2-3 more minutes.
