Stir-Fried Cured Pork with Green Garlic

Ingredients

Cured pork (Larou) as needed
Green garlic (Qiangsuan) as needed
Dried red chili segments to taste
Superior soy sauce (Weijixian) to taste

Instructions

Prepare the pork

Slice the cured pork. Steam the slices in a steamer basket for about 10 minutes (boiling briefly is also acceptable).

Stir-fry pork and chilies

Heat a wok over medium heat. Add the steamed pork (it will release some water and oil, so no extra oil is needed). Evaporate some of the moisture, then add the dried red chili segments.

Add green garlic

Add the white parts of the green garlic and stir-fry until fragrant.

Finish the dish

Add the green leaves of the green garlic and stir-fry until softened. Pour in the superior soy sauce, toss everything evenly to combine, then serve.
