Ingredients

duck gizzards 300g
garlic shoots (garlic chives) 100g
red chili 1
finger hot pepper 2
cooking oil 2 tbsp
light soy sauce 1 tbsp
salt 1/4 tsp
Shaoxing cooking wine 1 tbsp
cornstarch 1 tsp
white pepper pinch

Marinate the Gizzards

Slice the duck gizzards into thin, even pieces. Place them in a bowl and toss with the salt, cooking wine, white pepper, and cornstarch. Let the mixture sit for about 10 minutes to tenderize and absorb the flavor.

Prep the Aromatics

While the meat marinates, cut the garlic shoots into manageable lengths. Slice the red chili and finger hot peppers into thin rings. Set everything aside near the stove.

Sear the Gizzards

Heat the oil in a wok or large skillet over high heat until it shimmers. Add the marinated duck gizzards and stir-fry vigorously until they change color and are mostly cooked through.
