Stir-Fried Fish Maw with Onion

I used to discard fish maw when cleaning fish, never eating it. Discovering Malaysian processed, shelf-stable fish maw was a revelation—so much high-quality maw from such large fish. The dried maw expands generously when soaked and can be prepared in many ways. Today I stir-fried it with onions for a delicious dish.
