Stir-Fried Garlic Scapes with Braised Pork Intestines

Story

This classic Chinese home-style dish balances the rich, savory flavor of braised pork intestines with the fresh, mild bite of garlic scapes. The quick stir-frying method keeps the scapes crisp while allowing them to absorb the delicious braising juices from the intestines.

Ingredients

braised pork intestines 200g, pre-cooked and cut into bite-sized pieces
garlic scapes 150g, trimmed and cut into 2-inch lengths
vegetable oil 1 tablespoon
dried chili flakes 1/2 teaspoon
salt 1/2 teaspoon

Instructions

1

Prep the ingredients

If your pork intestines aren't already prepared, braise them until tender first. Cut the braised intestines into bite-sized pieces. Wash the garlic scapes thoroughly, drain well, and snip off the woody tail ends. Cut the scapes into 2-inch lengths.

2

Start stir-frying the intestines

Heat a wok or large skillet over high heat. Add the vegetable oil and swirl to coat. Add the cut intestines and sprinkle in the dried chili flakes. Stir-fry for 1-2 minutes until the intestines are heated through and lightly caramelized.

3

Add garlic scapes and season

Add the prepared garlic scapes to the wok along with the salt. Stir-fry quickly for about 1 minute, keeping the heat high. The scapes should remain crisp-tender with a bright green color.

4

Serve immediately

Transfer the stir-fry to a serving plate and enjoy right away while hot. This dish is best served immediately to appreciate the contrast between the tender intestines and crisp scapes.
