Stir-Fried Green Beans with Radish and Red Pepper

Story

This simple stir-fry showcases the natural sweetness of vegetables with minimal seasoning. The key is to keep the vegetables slightly crisp and vibrant.

Ingredients

Green beans (oil beans) 200g, trimmed and cut into 2-inch pieces
White radish 1 small, peeled and julienned
Red bell pepper 1 medium, seeded and cut into thin strips
Vegetable oil 2 tablespoons
Salt to taste
Water 3-4 tablespoons

Instructions

1

Prep the vegetables

Wash and dry all vegetables. Cut the red bell pepper into thin strips. Peel the radish and cut into matchstick-sized strips. Trim the green beans and cut into bite-sized pieces.

2

Start the stir-fry

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the radish strips and stir-fry for about 2 minutes until they begin to soften slightly.

3

Add the beans and pepper

Add the green beans to the wok and toss everything together. Pour in the water, cover, and let the vegetables steam for 3-4 minutes until the beans are nearly tender.

4

Finish and serve

Add the red pepper strips and continue stir-frying for another 2 minutes until all vegetables are crisp-tender and the liquid has evaporated. Season with salt to taste and serve immediately.
