Stir-fried Longhorn Beetle Larvae

Ingredients

Longhorn beetle larvae (pierce the belly, squeeze out the innards, wash clean) 100 g
Cooking wine (for deglazing) to taste
Refined salt (for seasoning) to taste
Soy sauce (for seasoning) to taste
Chopped green onion (for stir-frying to release aroma) to taste
Minced ginger (for stir-frying to release aroma) to taste
White sugar (for seasoning) to taste
Vegetable oil (for stir-frying) to taste

Preparation

Pierce the belly of the longhorn beetle larvae, squeeze out the innards, wash clean and set aside.

Stir-frying

Heat oil in a wok to 70% heat, stir-fry chopped green onion and minced ginger until fragrant, add the longhorn beetle larvae and stir-fry, pour in cooking wine and soy sauce, add refined salt and white sugar, stir-fry until the larvae are cooked and fully flavored, then plate and serve.
