Stir-fried Pork Liver with Shiitake Mushrooms and Wood Ear

Ingredients

pork liver slices as needed
shiitake mushroom slices as needed
wood ear mushrooms as needed
chopped scallions as needed
minced ginger as needed
chicken broth as needed
shiitake and wood ear soaking liquid (strained) as needed
fine salt as needed
MSG as needed
soy sauce as needed
brown sugar as needed
wet cornstarch (for thickening) as needed
sesame oil as needed

Instructions

Mix and Marinate

Mix the ingredients together and marinate (the preceding original text is not shown)

Stir-fry Scallions and Ginger

Place the wok over heat, add oil and heat until about 60% hot, then add chopped scallions and minced ginger, and stir-fry until fragrant.

Stir-fry Pork Liver

Add the pork liver slices and stir-fry quickly over high heat.

Add Side Ingredients

Add the shiitake mushroom slices and wood ear mushrooms, and continue to stir-fry briefly.

Add Broth and Season

Add chicken broth as needed, pour in the strained shiitake and wood ear soaking liquid, add fine salt, MSG, soy sauce, and brown sugar, and bring to a boil over low heat.

Thicken

Stir evenly, thicken with a thin slurry of wet cornstarch, drizzle with sesame oil, and serve.
