Stir-fried Pork Stomach Tips with Green Bamboo Shoots

Ingredients

Pork stomach tips (remove surface membrane, soak in clean water for 30 minutes) 250 g
Clean green bamboo shoot tips 200 g
MSG 2.5 g
Wet cornstarch 20 g
Clear meat broth 150 g
Minced garlic 10 g
Cooked pork lard 25 g
Sugar 15 g
Minced scallion 5 g
Vinegar 10 g
White pepper 1.5 g
Sesame oil 1 g
Fine salt 10 g

Instructions

Prepare the stomach tips

Remove the surface membrane from the pork stomach tips, soak in clean water for 30 minutes, then drain. Blanch briefly in a pot of boiling water, then remove. Slice diagonally into thin slices 5 cm long and 1.7 cm wide.

Prepare the bamboo shoots

Cut the green bamboo shoot tips into thin slices 5 cm long and 1.7 cm wide. Blanch in a pot of boiling water until about 80% cooked, then remove and drain.

Stir-fry

Place a wok over high heat, add the cooked pork lard, and heat until about 60% hot (around 150 °C). Add the minced garlic and minced scallion and stir-fry until fragrant. Add the stomach slices and bamboo shoot slices and stir-fry for 3 minutes. Add the sugar, vinegar, fine salt, and MSG and stir to combine, then pour in the clear meat broth and bring to a boil. Thicken with a loose slurry of wet cornstarch, transfer to a plate, drizzle with sesame oil, sprinkle with white pepper, and serve immediately.
