Marinate the Pork
Slice the lean pork loin into thin strips. Place them in a bowl and add the minced ginger, cooking wine, meat tenderizer (or cornstarch), and black pepper. Mix thoroughly to coat the meat and let it sit for about 10 to 15 minutes to absorb the flavors and tenderize.
Prep the Vegetables
While the meat marinates, wash the garlic scapes and cut them into bite-sized segments, about 3 to 4 centimeters long. Set them aside near the stove.
Stir-Fry the Pork
Heat a wok or skillet over medium-high heat and add the cooking oil. Once the oil is hot, add the marinated pork strips. Stir-fry quickly until the meat changes color and is mostly cooked through, then remove it from the pan and set aside.
Combine and Serve
In the same wok, add the chopped garlic scapes and stir-fry for a minute or two until they turn bright green and fragrant. Return the pork to the pan, add the light soy sauce and a pinch of salt, and toss everything together for another minute. Serve hot with steamed rice.
