Stir-Fried Pork with Mung Bean Sprouts

Story

This dish is a staple in home cooking due to its speed and satisfying texture. The key is to cook over high heat to keep the bean sprouts crisp and the pork juicy.

Ingredients

Pork loin 150g
Mung bean sprouts 300g
Cilantro (coriander) 2 stalks
Scallion (green onion) 1 stalk
Fresh ginger 1 small slice
Cooking oil 2 tbsp
Salt to taste
Cooking wine 1 tsp

Instructions

1

Prep the Ingredients

Slice the pork into thin strips. Wash the bean sprouts thoroughly and drain. Cut the cilantro stalks into 2-inch sections. Finely shred the scallion and ginger.

2

Sear the Pork

Heat the oil in a wok over high heat. Add the shredded scallion, ginger, and pork. Stir-fry quickly until the meat changes color and is mostly cooked through.

3

Toss and Serve

Toss in the bean sprouts and cilantro sections. Add the salt and cooking wine. Stir-fry vigorously for just 1-2 minutes to maintain the crunch of the sprouts, then serve immediately.
