Stir-Fried Pork with Tomato and Tofu

Ingredients

Tomato (cut into chunks) 2
Tofu (cut into large chunks) 1
Pork (sliced) 80 g
Shredded ginger 1 tsp
Oil 1 tbsp
Cornstarch slurry (for thickening) 1 tbsp
Stock 1/2 cup
Sugar 1 tbsp
Soy sauce 1 tbsp
Cooking wine 2 tbsp
Salt 1 tsp

Prep

Cut the tomatoes into chunks. Cut the tofu into large chunks. Slice the pork.

Stir-fry and thicken

Stir-fry the pork thoroughly in the oil, add the tomatoes and tofu and stir to combine, add the seasonings and bring to a boil, then thicken with the cornstarch slurry and serve.
