Stir-Fried Scallops
Scallop meat has a tender, delicate texture, and is delicious prepared steamed, stir-fried, or in other quick cooking methods. For this recipe, we’ve added signature Sichuan-style pickled vegetables, with pickled chili peppers mixed in: these cut any fishy odor and boost overall flavor for an exceptionally tasty result. Pre-cleaned, ready-to-use scallop meat is widely available at most large supermarkets. The key to making this dish delicious is simply removing any residual fishy smell from the scallops before cooking.

Step 1
Buy ready-made scallop meat from the supermarket and wash it clean.
Step 2
Add scallion, onion, water, and cooking wine. Let it soak to remove the fishy smell. It needs to soak for about half an hour.
Step 3
Remove the soaked scallop meat and set aside.
Step 4
Bring water to a boil in a pot. Add the scallop meat and boil for one minute. Don't cook too long, as it will affect the texture. One minute is the perfect time.
Step 5
Chop all the side ingredients: onion, garlic, pickled peppers, and pickled ginger.
Step 6
Add oil to a wok and stir-fry all the seasonings until fragrant.
Step 7
Add the scallop meat and quickly stir-fry a couple of times.
Step 8
Add salt to taste and steamed fish soy sauce. A little oyster sauce for umami.
Step 9
Serve! Simple and delicious, really tasty.
