Ingredients

Large shrimp (peeled, deveined, sliced) 700 g
Pea shoots (washed, tips removed) 500 g
Eggs (use egg white mixed with wet starch to make a batter) 2
Cooking oil (actual consumption about 100 g) 800 g
Cooking wine 25 g
Scallion (split and cut into 2 cm segments) 25 g
Ginger (sliced) 10 g
Salt 7 g
Black pepper powder 2 g
Wet starch 40 g
Stock 50 g
MSG 5 g

Ingredient Preparation

Peel and remove heads from shrimp, make a small cut along the back to devein, then rinse clean. Slice each shrimp piece into thin slices. Slice the ginger. Split the scallion and cut into 2 cm long segments. Wash the pea shoots and remove the tips.

Marinating and Coating

Mix 25 g of wet starch and egg white into a batter. Separately, mix the shrimp slices with 3 g salt, 3 g MSG, and 10 g cooking wine evenly, let it marinate to absorb flavor, then coat with the egg batter.

Preparing Thickening Sauce and Blanching in Oil

Then mix the remaining cooking wine, MSG, salt, wet starch, and 50 g of stock into a sauce and set aside. Heat the wok, add oil, put the shrimp slices into the hot oil to blanch until cooked, then remove.
