Stir-Fried Shrimp with Fava Beans

Ingredients

small shrimp (prepared as peeled shrimp) 500 g
tender fava beans (peeled, split in half, blanched and rinsed in cold water) 120 g
egg (use the white to make a batter) 1
lard (about 50 g actually used) 600 g
salt (part for marinating, part for the sauce) 4 g
MSG (part for marinating, part for the sauce) 4 g
cooking wine (part for marinating, part for the sauce) 15 g
white pepper 1 g
ginger (some sliced) 3 g
scallion (some sliced) 5 g
wet cornstarch (part for coating, part for the sauce) 20 g
broth 25 g

Prepare the shrimp

Prepare the small shrimp into peeled shrimp. Marinate evenly with 1.5 g each of scallion, ginger, salt, and MSG, plus 1 g white pepper and 5 g cooking wine. Just before cooking, pick out the scallion and ginger, then coat the shrimp with 12 g wet cornstarch and egg white batter.

Prepare the accompaniments and sauce

Peel the fava beans and split them in half; blanch in boiling water, then rinse under cold water. Slice both the scallion and ginger. Combine 3 g MSG, 3 g salt, 8 g wet cornstarch, 8 g cooking wine, and the broth to make a sauce.

Stir-fry to finish the dish

Leave a little oil in the wok, quickly stir-fry the fava beans, then add the shrimp and toss a few times. Pour in the prepared sauce; once it bubbles and thickens, toss to coat evenly and serve.
