This quick stir-fry brings out the best in each ingredient—sweet, crunchy snow peas against rich, meaty shiitakes. Keep the peas crisp-tender for the best texture, and have everything ready before you start cooking since it comes together in just minutes.

Ingredients

snow peas 200g
shiitake mushrooms 150g
garlic, minced 2 cloves
vegetable oil 2 tablespoons
soy sauce 2 tablespoons
salt to taste
sesame oil (optional) a drizzle

Get vegetables ready

Trim the ends off the snow peas and pull away any strings along the edges. Slice the shiitake mushrooms into thin, uniform pieces so they cook evenly.

Bloom the garlic

Heat oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir for about 30 seconds until it becomes fragrant—watch closely so it doesn't brown.

Cook the mushrooms

Add the sliced mushrooms to the wok. Stir-fry for 2-3 minutes until they release their moisture, become tender, and pick up a light golden color.

Add the snow peas

Toss in the snow peas and continue stir-frying for 2-3 minutes until they turn bright green and reach a crisp-tender consistency. The mushrooms should be soft by now.

Season and serve

Drizzle in the soy sauce and give everything a quick toss to coat evenly. Add salt to taste. Remove from heat and finish with a drizzle of sesame oil if desired. Serve right away while hot.
