Trim the ends off the snow peas and pull away any strings along the edges. Slice the shiitake mushrooms into thin, uniform pieces so they cook evenly.
Bloom the garlic
Heat oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir for about 30 seconds until it becomes fragrant—watch closely so it doesn't brown.
Cook the mushrooms
