Stir-Fried Squid Rolls with Scallions

Ingredients

squid (cut into a wheat-ear pattern, cut into 5 cm blocks) 400 g
celery (cut into 3 cm segments) 50 g
scallions (cut into 3 cm strips) 30 g
tomato half
cucumber to taste
carrot to taste
green beans to taste
cherries to taste
ginger 2 g
garlic 2 g
refined salt 4 g
cooking wine 8 g
vinegar 5 g
MSG 2 g
cornstarch (for thickening) 4 g

Instructions

Preparation

Cut the squid into a wheat-ear pattern and into 5 cm blocks; cut the celery into 3 cm segments; cut the scallions into 3 cm strips.

Blanching

Bring a pot of water to a boil, add the squid, then remove and drain.

Cooking

In another wok, add oil. When the oil is about 80% hot, add the scallions, ginger, and garlic to bloom the aromatics, then add the celery, squid, cooking wine, vinegar, salt, and MSG, stir-fry, thicken with a cornstarch slurry, and remove from the heat.
