Prepare the squid
Clean the squid thoroughly, removing the transparent quill and any residual membrane. Make diagonal交叉 cuts on the inside surface of the squid body, about 3mm apart, then rotate 90 degrees and cut again to create a diamond pattern. Cut the squid into rectangular pieces about 5cm wide.
Blanch the green beans
Bring a pot of water to a rolling boil. Add a pinch of salt, a pinch of sugar, and a splash of oil. Drop in the green beans and blanch for 2-3 minutes until they turn bright green and remain slightly crisp. Drain and set aside.
Stir-fry the squid
Heat a wok or large skillet over high heat. Add 2 tablespoons of oil and swirl to coat. Add the minced garlic and stir for 10 seconds until fragrant. Add the squid pieces and stir-fry quickly for 30-40 seconds until they curl and turn opaque. Remove from the wok and set aside.
Combine and finish
Return the wok to high heat. Add the blanched green beans and stir-fry for 30 seconds. Add the squid back to the wok, then splash in the Shaoxing wine around the edges. Add soy sauce and toss everything together for another 30 seconds. Serve immediately while hot.
