This dish is a brilliant way to use up leftover youtiao (fried dough). The chewy texture of the sausage and the crunch of the vegetables contrast perfectly with the soft, fried bread.

Ingredients

Chinese sausage (Lap Cheong) 2 links, sliced diagonally
Youtiao (fried dough sticks) 2, cut into chunks
Large scallion (green onion) 1 large stalk, cut into sections
Gai lan stems (Chinese broccoli) 1/2 cup, sliced
Oyster sauce 1 tablespoon
Light soy sauce 1 teaspoon
Cooking oil 1 tablespoon

Prep the components

Rinse the Chinese sausage, scallions, and gai lan stems thoroughly. Slice the sausage diagonally, chop the scallions into large chunks, slice the gai lan stems, and cut the youtiao into bite-sized pieces.

Sear-Fry the aromatics

Heat a wok or skillet over medium heat with a splash of oil. Toss in the sliced sausage and stir-fry briefly to release the fat. Add the scallions and cook until fragrant, then add the youtiao chunks and stir for one minute.

Add the gai lan stems to the pan and stir-fry for 1 to 2 minutes until just tender. Drizzle in the oyster sauce and soy sauce, tossing everything together quickly to coat before serving.
