Lemon zest (finely grated) 1 lemon
Vanilla extract 2 tsp
Almond meal 75 g
Egg 1
Cake flour (low-gluten) 115 g
Strawberry jam 150 g
Marshmallows (pink and white) 200 g

Instructions

1

Preheat the oven

Preheat the oven to 180°C (350°F). Grease the bottom and sides of a 23 cm square pan and line with baking paper.

2

Make the dough

Place the butter, sugar and lemon zest in a bowl. Cream together. Stir in the vanilla extract, almond meal and egg. Add the flour and mix carefully.

3

Bake the base

Pour the mixture into the pan. Press down and smooth out. Bake for 20 minutes, until the dough begins to harden and turn golden. Cool in the pan for 10 minutes.

4

Top with jam and marshmallows

Spread the jam over the dough. Cut the marshmallows in half with scissors, place cut-side down evenly over the jam. Preheat the broiler (medium setting).

5

Broil the marshmallows

Place the pan under the broiler for 2 minutes, until the marshmallows melt and start to turn golden. Remove and gently press flat with the back of a spoon. Return under the broiler for 1 minute more to finish cooking. Let cool.

Serve

Just before serving, dust lightly with powdered sugar. Cut into 12 squares or bars and unmold.
