Strawberry Yogurt Crunch Cup

Ingredients

whole strawberries (stems removed, thickly sliced) 1 cup (about 6-8)
fresh orange juice 4 tbsp
whole rolled oats 2/3 cup
sunflower seeds 3 tbsp
pumpkin seeds 3 tbsp
clear liquid honey 2-3 tbsp
thick plain yogurt 1½ cup (note: original text may have an error, possibly 1½ cup)

Instructions

1

Prepare the strawberries

Cut off the stems and leaves of the strawberries, then thickly slice the fruit. Place the strawberries in a bowl and add the orange juice. Set aside.

2

Toast the oats

Place the oats in a skillet and toast over medium-low heat for 3 minutes, stirring occasionally with a wooden spoon to ensure even heating.

3

Toast the seeds

Add the sunflower seeds and pumpkin seeds, and toast for another 2 minutes or until light golden. Note — pumpkin seeds may pop a little!

4

Add flavoring

Remove the skillet from heat. Stir in the honey — it will hiss at first, but keep stirring until the oats and seeds are all coated. Let it cool slightly.

5

Layer into glasses

Place a layer of oats at the bottom of each glass. Add 2 heaping spoonfuls of yogurt, then some fruit. Add another layer of each ingredient.
