Stuffed Mushrooms with Shrimp

Step 1
Prepare 8 shiitake mushrooms and 300g fresh shrimp.
Step 2
Peel and devein the shrimp. Peel and slice the carrot. Remove the stems of the shiitake mushrooms and wash them thoroughly. Set aside.
Step 3
Add an appropriate amount of water to a pot. Once boiling, blanch the carrot slices briefly, then remove and chop finely.
Step 4
Finely chop the shrimp and place in a bowl. Add salt, sugar, white pepper, egg white, cornstarch, and 1 tablespoon of soy sauce.

Add the chopped carrot and stir in one direction.

The well-mixed shrimp filling should be sticky. When steamed, the shrimp will be tender and flavorful.

Place the shrimp filling into each mushroom cap, as shown in the picture.

Once all are prepared and arranged on a plate, steam over boiling water for 16 minutes.

Pour the steaming juices from the stuffed mushrooms into a pan, add a little water, and mix in some cornstarch slurry.

Drizzle over the stuffed mushrooms, garnish with chopped scallions. A perfect Mid-Autumn family reunion dish is ready.
