Stuffed Sweet Glutinous Rice

A sweet dish made primarily from glutinous rice, steamed with an assortment of dried and candied fruits.

Stuffed Sweet Glutinous Rice

Ingredients

glutinous rice 250g
apple (peeled, cored, and diced) a pinch
walnut halves (broken into small pieces) a pinch
longan flesh a pinch
raisins a pinch
green plum a pinch
green candied shreds a pinch
red candied shreds a pinch
red dates (pitted and diced) a pinch
cinquefoil root a pinch
water-soaked lotus seeds a pinch
honey (reduced over heat to evaporate moisture) 50g
white sugar 75g

Prepare the ingredients

Wash the glutinous rice thoroughly and steam until soft. Peel and core the apple, then dice. Break the walnut halves into small pieces. Pit the red dates and dice. Reduce the honey over heat to evaporate excess moisture.

Assemble and steam

Mix the steamed glutinous rice with the honey. Coat the inside of a large bowl with a layer of honey. Stand the lotus seeds upright in the center of the bowl bottom, then arrange the raisins, walnut halves, green and red candied shreds, cinquefoil root, diced apple, and diced red dates in rings around them. Fill the bowl with the glutinous rice, smooth the surface, and steam over a steamer for one hour.

Unmold the rice

Before serving, invert the steamed glutinous rice onto a large serving plate by rotating the bowl slightly and then lifting it off.

Pour the syrup

Place a ladle of hot water in a pan, add the white sugar, and reduce over heat until thick and syrupy. Pour the syrup over the glutinous rice and serve.
