Stuffed Winter Melon Balls with Shrimp Paste

Ingredients

Winter melon (carved into balls, hollowed out) 300 g
Shrimp (washed, pressed into shrimp paste) 200 g
Fatty pork (cut into small cubes) 15 g
Salted egg yolk (diced) 1
Broccoli (washed) 75 g
Water chestnuts (peeled, washed, finely diced) 2
Garlic (crushed) 2
Salt (seasoning) 1/2 tsp
White pepper (seasoning) a pinch
Egg white (seasoning) 1 tsp
Cornstarch (seasoning, plus extra for dusting) 1/2 tsp
Light soy sauce (sauce) 2 tsp
Ginger juice (sauce) 1 tsp
Cooking wine (sauce) 1 tsp
Sugar (sauce) 1/2 tsp
Water (sauce) 2 tbsp
Salt (for broccoli) 1/4 tsp
Oil (for broccoli) 1 tbsp
Water (for broccoli) 2 tbsp

Instructions

Step 1

Carve the winter melon into balls, hollowing out a small cavity in each one.

Wash the shrimp and press them into a paste. Marinate with the seasonings for a short while, then stir until the mixture becomes sticky.

Peel the water chestnuts, wash them, and finely dice.

Cut the fatty pork into small cubes.

Combine the water chestnuts and fatty pork with the shrimp paste and mix well.

Dice the salted egg yolk.

Dust the winter melon balls with a little cornstarch, fill each with the shrimp paste mixture, and place 1 piece of salted egg yolk in the center.

Arrange the stuffed winter melon balls on a plate, cover with plastic wrap leaving a small vent, and microwave on high for 1 minute.

Mix the sauce ingredients together, pour over the winter melon balls, cover with plastic wrap leaving a small vent, and microwave on high for 1 minute.

Crush the garlic.

Wash the broccoli and place it on a plate. Add the crushed garlic, 1/4 tsp salt, 1 tbsp oil, and 2 tbsp water, then mix well. Cover with plastic wrap leaving a small vent and microwave on high for 3 minutes. Arrange the broccoli around the winter melon balls to serve.
