Instructions
Activate the Yeast
Pour ½ cup warm water into a small bowl. Sprinkle in the yeast and stir gently until dissolved. Let the yeast sit for 5 minutes to activate.
Mix the Flours
Combine both flours and the salt in a large mixing bowl. Make a well (a large hole) in the center of the flour.
Knead the Dough
Pour the yeast and most of the remaining water into the well, stirring gently into the flour. If necessary, stir in the remaining water to form a soft dough. Turn the dough out onto a floured work surface and knead for 10 minutes until smooth and glossy. Place the dough in a clean bowl and cover with a tea towel.
First Rise
Let rise for 1.5 to 2 hours, until doubled in volume.
Divide and Shape
Preheat the oven to 425°F (220°C). Deflate the risen dough by pressing it with your knuckles. Divide the dough into 10 portions. With floured hands, shape the dough into rolls. Cover the rolls and let rest for 10 minutes.
Decorate and Bake
Brush each roll with the beaten egg and gently press the sunflower seeds into the top. Bake for 25–30 minutes, until puffed and golden.
