Sweet and Sour Crispy Pork

Sweet and Sour Crispy Pork

Ingredients

skinless half-fat half-lean pork (cut into long slices, scored then cut into chunks) 300 g
cooked bamboo shoots 150 g
salt (for marinating) to taste
egg white (to make egg white batter) to taste
dry starch (for coating) to taste
oil (for frying) to taste
minced garlic (for stir-frying until fragrant) to taste

Instructions

Prepare pork chunks

Cut the pork into long slices, lightly score the surface then cut into chunks, marinate with salt, add egg white batter, then coat with dry starch.

First fry

Place the pork chunks in oil heated to 50% heat and fry for 3 minutes, then turn to low heat and fry for 2 more minutes before removing.

Second fry

When the oil temperature rises to 50% heat, add the pork chunks and bamboo shoot chunks, fry together until golden brown then remove.

Make sweet and sour sauce

Leave a small amount of base oil in the wok, add minced garlic and chili, stir-fry until fragrant, then add scallions and sweet and sour sauce, finally thicken with water starch.

Coat with sauce and serve

Add the fried pork chunks and bamboo shoot chunks to the wok, stir-fry quickly to coat the ingredients evenly with the sauce, then drizzle with oil and serve.
