Ingredients

Watermelon rind (remove the outer green skin and white soft layer, keep only the light green part, sun-dry until slightly dry) 1000 g
Radish (washed and shredded) 50 g
Cucumber (washed and sliced) 50 g
Garlic (reserved) 5 cloves
Cooking oil 30 g
Sesame oil 2 tsp
Soy sauce 2 tsp
Cooking wine 2 tsp
Salt 2 tsp
Sugar 1 tsp
MSG 1 tsp

Instructions

1

Prepare the Watermelon Rind

Remove the outer green skin and the white soft layer near the flesh of the watermelon, keeping only the light green layer near the outer skin. Place in the sun and dry until about one-tenth dry.

2

Prep the Ingredients

Wash the sun-dried rind, blanch in boiling water, then remove and let cool. Squeeze out the excess water and cut into pieces. Wash and slice the cucumber. Wash and shred the radish.

3

Stir-Fry

Heat the cooking oil in a wok. Add the watermelon rind, cucumber slices, and radish shreds, and stir-fry briefly. Add the cooking wine, soy sauce, sugar, salt, and a small half-bowl of water. Stir well, cover, and cook for several minutes. When the sauce is almost dry, add the MSG, drizzle with sesame oil, and stir well before serving.
