Sweet and Sour Tofu
A Shanghai cold dish made primarily with tofu. The tofu is soaked in a marinade prepared by simmering bay leaves and cloves in water, then flavored with sugar and vinegar, giving it a sweet and sour taste.
Ingredients
Tofu (cut into slices about 3 cm long, 2 cm wide, and 0.2 cm thick, blanched in boiling water)
300 g
Bay leaves
2 slices
Cloves
3
Sugar
to taste
Vinegar essence
a pinch
Instructions
1
Process the tofu
Cut the tofu into slices about 3 cm long, 2 cm wide, and 0.2 cm thick, then blanch in boiling water.
2
Make the brine and soak
Take a pot, add water, bay leaves, and cloves, and heat over the stove until the aroma is released. Add sugar and stir to dissolve, then remove from heat. Set aside until completely cooled, then add vinegar essence to make a pleasantly sweet-and-sour brine. Finally, soak the tofu in the brine.
