adzuki beans

to taste
Instructions
1
Steam the Rice
Wash the glutinous rice and steam it until cooked. While it is still warm, mix in the powdered rice wine starter.
2
Fill the Jar
Pack the rice firmly into a jar, smoothing the surface and leaving a cone-shaped hole in the center. Drizzle a little warm water into the hole.
3
Keep Warm for Fermentation
In winter, wrap the outside of the jar in a quilt to keep it warm. Over the next few days, the rice ferments and develops a sweet aroma, while clear liquid collects in the central hole.
