Thai-Style Lemon Pork Slices
A cold appetizer of cooked pork slices drizzled with a dressing of lemon juice, minced garlic, and chili flakes.
Ingredients
Pork lean meat (blanch in boiling water to remove blood, then wash and slice)

Lemon (wash, slice, and squeeze out the juice by hand)

Make the seasoning sauce
Wash the lemon, slice it, and squeeze out the juice by hand. Finely chop the garlic and red chili pepper. Mix the lemon juice, minced garlic, minced chili, and white sugar together to make a sauce, and set aside. Blanch the pork lean meat in boiling water to remove the blood, then wash and slice it.

Cook and slice the meat
Place a pot on the stove, add an appropriate amount of water, add the meat slices, bring to a boil over high heat, then reduce to low heat and simmer for half an hour. Remove, let cool, then slice, and finally pour the sauce prepared in step (1) over the pork slices.
