Ingredients

Bitter melon 500 g
Rehydrated shiitake mushrooms 100 g
Winter bamboo shoots 100 g
Fresh broth 1000 g
Salt to taste

Instructions

1

Step 1

Remove the stem and pith from the bitter melon and cut it into thick slices. Slice the winter bamboo shoots thinly, and trim the stems from the shiitake mushrooms before slicing them thinly.

2

Step 2

Add an appropriate amount of water to a pot and bring it to a boil. Blanch the bitter melon slices briefly, then drain off the water.

3

Step 3

Wipe the soup pot clean and set it over high heat. Add oil and heat to about 70% hot, then stir-fry the bitter melon briefly. Pour in the fresh broth, and once it comes to a boil add the winter bamboo shoots and shiitake mushroom slices. Cook until everything is tender, season with salt to taste, and serve.
