Ingredients

Sea cucumber (hydrated, cut into long slices, blanched in scallion-ginger water) 600 g
Shredded chicken 50 g
Shredded ham 20 g
Shredded winter bamboo shoots 50 g
Sesame oil 40 g
Chicken broth 300 g
Cooking wine 30 g
White pepper a pinch
Wet cornstarch (diluted) 20 g
Salt 4 g
MSG 3 g
Minced scallion 20 g
Minced ginger 10 g

Instructions

1

Step 1

Cut the hydrated sea cucumber into long slices and blanch them in scallion-ginger water to remove any off-flavor.

2

Step 2

Heat the sesame oil in a wok over high heat to 60–70% hot, add the minced scallion and ginger, and stir-fry briefly until fragrant. Then add the chicken broth, sea cucumber slices, shredded chicken, shredded ham, and shredded winter bamboo shoots.

3

Step 3

Stir-fry briefly, then add the cooking wine, white pepper, and salt, and braise everything together.

4

Step 4

Finally add the MSG and the diluted wet cornstarch to create a thin glossy sauce, and it is ready to serve.
