Ingredients

Lean pork (cut into 4 pieces, each 4 inches square) 400 g
Pork liver (cut into 4 strips, each 4 inches long) 175 g
Pork fat (cut into 4 pieces, each 4 inches long and 1 inch wide) 75 g
MSG 4 g
White sugar 16.5 g
Chopped scallions 40 g
Fine salt 16.5 g
Rose wine 16.5 g
Light soy sauce 13 g
White pepper a pinch

Ingredient preparation

Cut the lean pork into 4 pieces, each 4 inches square; cut the pork fat into 4 pieces, each 4 inches long and 1 inch wide; cut the pork liver into 4 strips, each 4 inches long.

Marination

Marinate the pork slices and liver in a mixture of salt, sugar, soy sauce, MSG, rose wine, chopped scallions, and white pepper for 10 minutes; also marinate the pork fat with salt and rose wine for 10 minutes.

Rolling and roasting

Take out the pork slices and lay them flat. Place pork fat on top, then add pork liver to form a 3-layer roll. Tie the outside tightly with string, then roast in a hanging oven for about 20 minutes. Remove the string and cut into pieces about 8 fen (~2.4 cm) long.
