Tomato Braised Beef

Ingredients

tomato (washed, stem removed, cut into chunks) 250 g
cooked beef (cut into pieces about 3.5 cm long and 3 cm wide) 200 g
sweet bean paste 5 g
lard 20 g
star anise a pinch
chopped scallion 5 g
minced ginger 5 g
soy sauce 15 g
sugar 25 g
cooking wine 10 g
cornstarch slurry 15 g
stock 100 g
salt to taste

Ingredient Preparation

Cut the beef into pieces about 3.5 cm long and 3 cm wide. Wash the tomatoes, remove the stems, and cut into chunks.

Cooking and Braising

Heat oil in a wok, fry the star anise until dark red, add scallion and ginger to release aroma, then stir-fry the sweet bean paste. Add the stock and salt, add the beef, and braise for about 4 minutes. Add the tomatoes and sugar, braise for a little longer, thicken with cornstarch slurry, stir evenly, and serve.
