Sweet and Sour Lettuce Stalks

Ingredients

Asparagus lettuce (peeled and shredded or sliced) to taste
Sugar to taste
Vinegar to taste
Sesame oil (heated to 70% hot) to taste
Sichuan peppercorns (fried until fragrant, then removed) to taste
Red chili shreds (fried until golden brown) to taste
Ginger shreds (fried until golden brown) to taste

Instructions

Prepare the sweet and sour sauce

Place the sugar and vinegar in a bowl and stir until well blended into a sweet and sour sauce.

Fry the Sichuan peppercorn oil

Place a wok over high heat, add the sesame oil, and heat to about 70% hot. Add the Sichuan peppercorns, fry until fragrant, then remove and set aside.

Fry the red chili and ginger shreds

Add the red chili shreds and ginger shreds to the wok and fry until golden brown.

Marinate to absorb the flavor

While still hot, first pour the red chili shreds, ginger shreds, and their oil into the bowl of lettuce, then add the sweet and sour sauce. Place a plate on top to press the lettuce down so it stays submerged in the sweet-and-sour chili liquid. Let it marinate for about 2 hours, then it is ready to serve.
