Ingredients

Cherry tomatoes (about 20, halved) 240 g
Olive oil (divided use) 2 1/2 tsp
Thyme (leaves only) 4 sprigs
Salt to taste
Black pepper to taste
Crusty country-style bread (toasted) 4 slices
Garlic (halved) 1 cloves
Basil leaves to taste
Parmesan cheese (shaved into thin slices) to taste

Instructions

1

Roast Tomatoes

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper, add halved cherry tomatoes. Drizzle with 1 teaspoon olive oil, sprinkle with thyme leaves, and season with salt and pepper. Roast for 6-8 minutes until soft.

2

Prepare Bread

Toast the bread slices and let cool slightly. Rub the cut side of the garlic over one side of the toasted bread, then drizzle with the remaining olive oil.

3

Assemble

Carefully spoon the roasted tomatoes onto the bread slices, top with basil leaves. Use a vegetable peeler to shave a few slices of Parmesan cheese for garnish. Serve warm.
