Tomato Minced Pork with Crispy Rice Crust
A classic Cantonese home-style dish featuring a savory tomato and minced pork sauce spooned over crispy golden rice crust.

Preparation
Dice the tomato and onion. Mix the ground pork with the marinade (3/4 tbsp light soy sauce, 1/4 tsp sugar, a pinch of sesame oil, a pinch of pepper, 1 tsp cornstarch, 1 tbsp water) and marinate for 10 minutes.
Prepare the Rice Crust
Heat the rice crust in an oven at medium heat for 2 minutes, or briefly deep-fry in hot oil, then transfer to a plate and set aside. Preheat the oven for 1–2 minutes before placing the rice crust inside.
Cook the Topping
Heat 3 tbsp of oil in a pan, sear the pork until fragrant, add the minced garlic and onion and stir-fry, then add the tomato and sauce mixture (1/4 cup water, 3 tbsp ketchup, 1/4 tsp salt, 1 tbsp sugar, 2 tsp light soy sauce, 1 tsp cornstarch), stir to combine, and cook until thickened.
Plating
Transfer the cooked tomato minced pork into a deep dish and serve with the crispy rice crust.
