Tomato Sauce
A thick sauce made by blanching tomatoes, removing the skins and seeds, then mixing with ketchup, spicy soy sauce, and other seasonings.
Ingredients
tomato (blanched, peeled, and deseeded)
to taste
tomato paste
to taste
tomato ketchup
to taste
sherry vinegar
to taste
Tabasco sauce
a few drops
olive oil
to taste
Instructions

Prepare the tomatoes
Blanch the tomatoes in hot water, then plunge them into cold water. Peel, deseed, and roughly chop the flesh.

Blend
Place the flesh in a food processor and blend until smooth.

Season
Add the tomato paste, tomato ketchup, sherry vinegar, and a few drops of Tabasco sauce. Season with salt.

Add the oil
Add the olive oil and mix quickly with an immersion blender.

Strain
Strain the seasoned sauce several times for a smooth finish.
