Ingredients

Sugar cookie dough (recipe on p.118, pressed into mold ½ inch deep) to taste

Royal icing (recipe on p.118) to taste

Meringue powder (for royal icing) to taste

Dark cocoa candy melts (colored black for hat) to taste

Wine glass candy mold (for making solid hat) 1

Round metal cutter (for cutting base) 1

Instructions

Make candy hats in advance

Make candy hats in advance. Color melted candy black with candy color. Shape solid hats in wine glass mold (p.130); refrigerate until set.

Finish the hats

Place hats on parchment-lined cake board; pipe brim with melted candy in cut parchment bag; refrigerate until set.

Make cookie bases

Prepare cookie dough, roll out ¼ inch thick, cut with round cutter.

Bake soldier cookies

Prepare cookie recipe, press into boy mold ½ inch deep. Bake cookies in silicone mold and cool (support with cookie paper).

Decorate the soldier

Decorate soldier with royal icing. Smooth face, hands, and clothing. Pipe belt, shirt collar, cuffs, and epaulets with #2 tip; dot nose, eyes, and buttons.

Detail decoration

Pipe mouth and button details with #1 tip; pull-out dots for epaulets.

Assembly

Attach soldier to round cookie with melted candy; attach hat to head. Pipe hair, hat band, and iris decorations with #3 tip pull-out. Each serves 1 person.
