Turkey Linguine

Ingredients

boneless turkey breast (cut into 1/2-inch strips) 1 pound
olive oil 1 tablespoon
onion (chopped) 1/2 cup
garlic cloves (minced) 2
broccoli florets 1 cup
carrots (thinly sliced) 1 cup
fresh basil or dried basil (minced) 1 tablespoon or 1 teaspoon
fresh tarragon or dried tarragon (minced) 1 teaspoon or 1/4 teaspoon
fresh thyme or dried thyme (minced) 1 teaspoon or 1/4 teaspoon
pepper 1/8 teaspoon
cornstarch 2 tablespoons
chicken broth 1-1/2 cups
linguine or pasta (cooked) 8 ounces
grated Parmesan cheese 1/2 cup

Stir-fry

In a large skillet or wok, stir-fry turkey in oil for 2 minutes. Add onion and garlic; cook and stir for 1 minute. Add broccoli, carrots, basil, tarragon, thyme and pepper; stir-fry for 3-4 minutes or until vegetables are crisp-tender.

Thicken and serve

Combine cornstarch and broth until smooth; add to the turkey mixture. Cook and stir until the mixture comes to a boil; cook 2 minutes longer. Serve over linguine; sprinkle with Parmesan cheese.
