Vanilla Almond Praline-Coated Sandwich Cookies

Almond and vanilla sandwich cookies with edges coated in homemade praline, ideal alongside a strong coffee.

Vanilla Almond Praline-Coated Sandwich Cookies

Ingredients

all-purpose flour 150 g
almond flour 75 g
butter (cubed, for dough) 75 g
egg yolk (for dough) 1
vanilla extract 1 tsp
powdered sugar (sifted, for dusting)
whole almonds (peeled, for praline) 25 g
fine sugar (extra-fine, for praline) 50 g
butter (cubed, for filling) 75 g
powdered sugar (sifted, for filling) 150 g
vanilla extract (for filling) 1 tsp

Prepare Oven

Preheat oven to 160°C (heat setting 5). Line 3 baking sheets with parchment paper.

Make Dough

In a bowl, mix all-purpose flour, almond flour and butter by kneading until the mixture starts to come together. Add egg yolk and vanilla extract. Stir by hand until a soft, non-sticky dough forms. Roll the dough out on parchment paper to 5mm thick. Cut out circles with a 5cm round cutter, and place them on the baking sheets.

Bake

Bake for 15 to 20 minutes, until the cookies start to turn golden. Leave them on the baking sheets for 5 minutes to set, then transfer to a wire rack to cool completely.

Make Praline

For the praline: lightly grease a baking sheet, arrange almonds on top close to each other. Melt fine sugar in a small non-stick pan over low heat. When the sugar turns amber, pour it over the almonds. Once cooled, grind the praline pieces in a blender.

Make Filling

Make the filling: beat butter, powdered sugar and vanilla extract until fluffy. Assemble the cookies into sandwiches using the filling. Spread the filling to the edges to form a thick layer. Press the sandwiches so the filling oozes out the sides, then smooth the sides with your fingers.

Decorate

Put the praline on a plate. Roll the sides of the sandwiches to coat them fully with praline. Dust the tops with powdered sugar.
